Tomato Sauce with Lentils and Roast Vegetables

Vegan Tomato Pasta Sauce

Here's my recipe for a Tomato sauce with Lentils, and Roast Vegetables.  It is based on my Simple Tomato sauce for pasta but has extra ingredients to bulk it out and make it into a more balanced meal.



Ingredients
  • 2 x Medium onions
  • 2 x Cloves of Garlic
  • 1 x tin of chopped tomatoes
  • 1 x Tablespoon Tomato puree
  • Vegetable stock cube
  • Teaspoon sugar (if necessary)
  • Basil (optional)
  • 100g Cooked Red Lentil
  • 1 x Pepper
  • 100 g Butternut Squash

Instructions
  1. Make the tomato sauce according to this method.
  2. Roast your Butternut Squash and Pepper in the Oven until cooked.
  3. Add the cooked Lentils
  4. Simmer for 5 minutes till all the ingredients have warmed through and serve with Spaghetti.
Results

This sauce has the same rich deep, base flavour as the tomato sauce but is more hearty with the added Lentils and Veg, and makes a much more nutritious meal on its own.
