Here is my method for making a quick and easy basic White sauce. I've skipped the step of making a Roux to make it much simpler, and avoid any unwanted lumps. The sauce works well as a basic White Sauce and can be adapted to make any White sauce, sweet or savoury by adding the appropriate ingredients.
Ingredients
- 200ml Milk
- 10g Flour (around 1 tablespoon)
- Seasoning (according to whether the sauce is sweet or savoury).
- Knob of Butter for additional richness (optional)
Instructions
- In a saucepan whisk the Flour into the Milk while cold
- Add the appropriate seasoning
- Over a fairly high heat bring the milk to the boil, whisking continuously
- Reduce heat and simmer for 5 minutes to cook out the flour and allow the sauce to thicken.
This makes a basic white sauce that can be adapted to your needs. If you're making it for a savoury dish you just add salt and pepper, for a sweet sauce add a teaspoon of sugar.
From this starting point you can make any number of sauces, from a Bechamel to go with a Lasagne or Rum flavoured sauce to go with Christmas pudding.
Let me know how you get on and any interesting variations you find.
I have tried to make white sauce but often lumps are formed in it. I will try out this recipe and will follow your instrcutions closely for making white sauce.
ReplyDeleteIf you make sure the milk is cold before whisking in the flour it should work without any lumps.
