Leek and Potato Soup by Tr1ky

Here's my recipe for a delicious hearty Leek and Potato Soup. Some people add milk but I don't think it's necessary, the potatoes go almost creamy once they are blended. The butter could easily be omitted to make this a Vegan dish.

Ingredients

1x tbsp olive oil
30g of butter
1x small Onion finely chopped
2x Leeks
350g of Potatoes peeled and chopped
850ml Vegetable stock
Salt and Pepper

Instructions

1) Melt the butter and mix with oil in a large saucepan.

2) Add chopped Leeks and the chopped onion, put a lid on the sauce pan and sweat for 7-10 minutes until the onions are softened.

3) Add the chopped potatoes, and Vegetable stock and season with salt and a generous amount of Black pepper. For details of how to make your own stock Click here.

4) Bring to the boil and then simmer gently for around 15-20 minutes till the potatoes are fully cooked.

5) Blend the soup to a smooth consistency. I use a hand blender and liquidise in the pan so that it can be served immediately but a normal electric blender or food processor would work too.

Soup

The soup is hearty and creamy with a light oniony flavour from the Leeks.

Give it a try and let me know what you think!
