This is my simple recipe for Cheddar Cheese and Chive Scones. It's a nice, quick and easy recipe so is great for making with the kids and takes about half on hour from start to finish. This recipe makes about six Scones, but can be very easily doubled up. I use Chives as I like the light oniony flavour they give, and we have them in the garden.
Ingredients
- 200g Self Raising Flour
- 50g Butter (or margarine/spread)
- 100ml Whole milk
- 50g Cheddar Cheese (grated or diced)
- Sprinkling of Chopped Chives
- 1/2 Teaspoon Salt
- Pinch Cayenne Pepper (Optional)
Instructions
- In a Bowl rub the Butter into the Flour with your fingers.
- Add the Cheese, Chives, Salt and Cayenne.
- Add the milk and mix to form a dough. No kneading is required
- On a lightly floured surface roll out the dough to about a 3cm thickness
- Using a pastry cutter or knife cut out the scones (you can do whatever shape you like).
- Place on a greased baking tray and bake at 200° C for 15-20 minutes untilgolden brown on top.
- Allow to cool on a wire rack and serve
Best served fresh and still warm.
Grating the Cheese means you'll get a more even spread, but I like to dice it into chunks so the Scones have pockets of melted cheese inside.
You can brush with egg or milk to give a more glazed finish to the Scones if you really want, but I don't think it's necessary.
