Simple Tomato Sauce

Here's my recipe for a simple Tomato sauce. This can be used as a basis for a pasta sauce, the sauce for a pizza or even transformed into a tomato soup.


Ingredients
  • 2 x Medium onions
  • 2 x Cloves of Garlic
  • 1 x tin of chopped tomatoes
  • 1 x Tablespoon Tomato puree
  • Vegetable stock cube
  • Teaspoon sugar (if necessary)
  • Basil (optional)

Instructions
  1. First, use this method to prepare the onions.
  2. Add the garlic and cook for a minute on a low heat.
  3. Add the tomato puree, tinned tomatoes and the stock cube and stir
  4. Simmer gently for 15-20 minutes to cook out the puree and allow the flavours to develop. At this stage you should taste the sauce and adjust the seasoning. If the sauce is too sharp you can add a teaspoon of sugar (cook for a further couple of minutes to dissolve the sugar).
  5. Turn off the heat and add the chopped Basil (it will cook in the residual heat).

Results

Here's how it looks when finished. It should be a deep, rich concentrated sauce.
