Tomato & Red Pepper Salsa

Here is my recipe for a really simple, healthy tomato and red pepper salsa with no cooking required. This is an ideal accompaniment for many Mexican dishes such as Nachos or Fajitas.

Ingredients

  • 2 x Fresh Tomatoes
  • 2 x Tablespoons of Tomato Puree
  • Cucumber (a piece a couple of inches long
  • Red Pepper
  • 1 x small onion or shallot (optional)
  • Juice of a Lime
  • Chilli (to taste)
  • Salt

Instructions

  1. Chop all the ingredients into fairly small pieces and add to a bowl. Sprinkle with salt and squeeze over the Lime juice. If you're using it the onion should be chopped very finely. Don't worry at this stage the salsa should be fairly thick. 
  2. Allow to stand for at least half an hour for the flavours to mingle and develop. The lime juice and salt should soften the ingredients and as they begin to break down liquid will be released.

Results

It makes a really fresh, zingy salsa that is a great accompaniment for a lot of different dishes.
