Pulled Pork by Tr1ky

Here's my recipe for Pulled pork. It is a real crowd-pleaser and is great to serve when entertaining or for a big family meal.


Ingredients

  • 1 shoulder of pork joint.
  • 1 tbsp ground cumin
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chilli powder
  • 1 tbsp cayenne pepper
  • 1 tbsp salt
  • 1 tbsp ground pepper (white/black)
  • 1 tbsp paprika
  • 1/2 cup brown sugar
Instructions

  1. Mix all spices together in a mixing bowl and stir together.
  2. Dry rub the spices onto the pork lifting the rind (cutting the rind if needed) and making sure that the pork is covered in the spices all over. I have found the best way to do this is in a big food bag.
  3. Tie the food bag and refrigerate over night.
  4. Remove from the food bag and wrap in foil making sure that the all the spice mix is also wrapped in the foil.
  5. Wrap a second time in foil to make sure that no spice escapes, and to allow the pork to steam.
  6. Place in the oven on a low shelf gas mark 1 for approximately 8 hours.
  7. Once cooked remove from the oven and leave to rest in the foil for 1 hour before.
  8. Shred with two forks and serve.

Results

The Pork should have some crisp crackling while being delicious and tender and easily falls apart.
